  • 1/2 cup (113 g) unsalted butter, melted and slightly cooled
  • 1 cup (95 g) old fashioned oats
  • 1 cup plus 2 tablespoons (140 g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon molasses (or honey)
  • 1/2 cup (60 g) powdered sugar, sifted
  • 1 to 2 tablespoons whole milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper.
  2. Melt the butter and let it cool. Pulse oats in a food processor until slightly smaller.
  3. In a bowl, combine pulsed oats, flour, baking soda, cinnamon, and salt.
  4. Mix sugars into cooled butter until sandy. Add egg, vanilla, and molasses; mix well.
  5. Fold dry ingredients into wet mixture until just combined.
  6. Spread dough into the prepared pan and bake for 20-24 minutes until golden.
  7. Cool completely before icing with powdered sugar mixed with milk and vanilla.
