  • 2 tablespoons butter
  • 1 yellow onion, diced
  • ½ cup carrots, diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced

  • 1 cup heavy cream
  • 1 ¼ lbs red potatoes, cubed

  4. Gradually add chicken broth while scraping the bottom of the pot. Stir until smooth.
