  • 3 packages (8 ounces each) softened cream cheese
  • 3/4 cup packed brown sugar
  • 4 lightly beaten eggs

  • 2 1/4 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 3/4 teaspoon allspice
  • 1/2 teaspoon salt
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a greased 9-inch springform pan.
  2. In another bowl, beat cream cheese and sugars until smooth. Add eggs gradually, mixing gently. Stir in sour cream, vanilla extract, and spices until well combined.
  3. Pour filling into crust in the springform pan and bake for approximately 55-65 minutes until edges are firm but center has a slight jiggle.
  4. Cool on a wire rack for 10 minutes before loosening edges with a knife. Let cool completely and refrigerate overnight.
  5. Whip heavy cream with powdered sugar until soft peaks form for topping before serving.
