  • 4 boneless skinless chicken breasts
  • 3/41 cup plain Greek yogurt (or dairy-free alternative)
  • 2 tablespoons yellow mustard
  • 2 tablespoons Dijon mustard
  • 23 tablespoons honey
  • 4 cups romaine lettuce, chopped
  • 1 cup gorgonzola cheese (or alternative)
  • 1 cup slivered almonds
  • 1 1/2 cups blueberries
  • 1/2 cup dried cranberries or cherries

Instructions

  1. Prepare the dressing by mixing yogurt, yellow mustard, Dijon mustard, honey, lemon zest, salt, and pepper in a mason jar or bowl. Store in the fridge.
  2. Marinate chicken by whisking soy sauce, olive oil, Worcestershire sauce, garlic, lemon juice, lemon zest, salt, and pepper together. Coat chicken breasts in marinade; refrigerate for at least 30 minutes.
  3. Grill marinated chicken over medium heat for about 10-12 minutes until cooked through (internal temperature of 160°F). Let rest for five minutes before slicing.
  4. Assemble salads: divide romaine among bowls and top with sliced chicken, cheese, almonds, blueberries, cranberries/cherries, and drizzle with dressing.
