  • 8 skinless, boneless chicken thighs
  • 2 tbsp cornflour (cornstarch)
  • 4 cloves minced garlic
  • 110 g honey
  • 80 ml chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 1 tbsp finely chopped fresh parsley
  • 1/2 tsp chilli flakes
  • boiled rice

Instructions

  1. Coat chicken thighs with cornflour, salt, and pepper in a bowl.
  2. Heat vegetable oil in a frying pan over high heat and add the chicken. Cook until golden brown (4-5 minutes per side).
  3. Reduce heat to medium, add butter and minced garlic; sauté gently.
  4. Mix honey, chicken stock, rice vinegar, and soy sauce in a bowl; pour into the pan with chicken and bring to a boil before simmering for 4-5 minutes until thickened.
  5. Serve over boiled rice garnished with parsley and chili flakes.
