  • 2 eggs
  • 1/2 cup pumpkin puree
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice

  • 1 teaspoon baking powder
  • 1 tablespoon melted coconut butter
  • 1 tablespoon maple syrup
  • 1 tablespoon dairy free milk

Instructions

  1. Preheat your oven to 160C (350F) and grease a mini muffin tray.
  2. In a bowl, whisk together eggs, pumpkin puree, honey (or maple syrup), and vanilla until smooth.
  3. Add coconut flour, spices, and baking powder; mix until combined.
  4. Fill each muffin hole three-quarters full with batter and bake for about 15 minutes.
  5. For the glaze, mix melted coconut butter, maple syrup, and dairy-free milk in a small bowl until smooth.
  6. Once cooled slightly, dip each donut hole into the glaze.
