  • 1 lb lean ground beef (or turkey/chicken)
  • 8 oz dry farfalle pasta
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 cups low sodium chicken broth
  • 2/3 cup fat-free cottage cheese
  • 1 cup part-skim mozzarella cheese
  • 3 tsp minced garlic
  • 1 1/2 tsp dried oregano
  • 1 Tbsp dried onion flakes
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Sauté minced garlic in olive oil over medium-high heat until fragrant.
  2. Add ground beef, salt, pepper, oregano, and onion flakes; cook until browned.
  3. Stir in diced tomatoes, tomato sauce, chicken broth, and pasta; combine well.
  4. Cover and bring to a boil; then reduce heat to simmer for 14-15 minutes until pasta is tender.
  5. Remove from heat and mix in cottage cheese; top with mozzarella cheese. Cover for 1-2 minutes to melt the cheese.
  6. Serve warm with fresh basil if desired.
