  • 1 teaspoon dried basil

  • ¼ teaspoon black pepper
  • 2 cups cooked brown rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ small red onion, thinly sliced
  • ½ cup kalamata olives, sliced
  • ½ cup feta cheese, crumbled
  • 1 cup romaine lettuce, chopped
  • 1 cup Greek yogurt
  • ½ cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • ½ teaspoon salt

Instructions

  1. Marinate chicken by whisking together olive oil, lemon juice, garlic, oregano, basil, salt, and pepper. Coat the chicken breasts well and refrigerate for at least 30 minutes.
  2. Cook marinated chicken in a grill pan over medium-high heat for 5-7 minutes per side until fully cooked. Let rest before slicing.
  3. For the tzatziki sauce, mix Greek yogurt with grated cucumber, garlic, lemon juice, dill, and salt.
