Hawaiian Huli Huli Chicken Tacos are a vibrant, tropical twist on traditional taco night! This quick and easy recipe features grilled chicken marinated in a sweet and tangy blend of pineapple juice, soy sauce, and spices.   • 2 lbs boneless, skinless chicken breast
  • 1/2 cup pineapple juice
  • 1/2 cup brown sugar
  • 6 tablespoons ketchup
  • 6 tablespoons soy sauce
  • 3 tablespoons chicken broth
  • 1 1/4 teaspoons fresh ginger (minced)
  • 3/4 teaspoon garlic (minced)
  • 24 mini corn tortillas
  • 1 cup pineapple (diced)
  • 1 cup fresh mango (diced)
  • 1 cup avocado (diced)
  • 1/2 cup cilantro (chopped)
  • 1 tablespoon fresh lime juice
  • pinch sea salt

Instructions

  1. Prepare the Marinade: Whisk together pineapple juice, brown sugar, ketchup, soy sauce, chicken broth, ginger, and garlic in a large bowl. Reserve 1 cup of marinade. Add chicken to the bowl and coat well. Refrigerate for 30 minutes.
  2. Make the Salsa: In another bowl, combine diced pineapple, mango, avocado, cilantro, lime juice, and salt. Toss gently and set aside.
  3. Grill the Chicken: Preheat grill pan over medium heat. Drain chicken (discard marinade) and grill for 6-8 minutes per side until cooked through. Dice into bite-sized pieces.
  4. Assemble Tacos: Fill mini corn tortillas with grilled chicken and fresh salsa. Serve warm.
