  • ¼ teaspoon nutmeg, freshly grated
  • Pinch cloves
  • 1 (15 ounce) can pumpkin puree
  • 1½ cups (175 grams) powdered sugar
  • 23 tablespoons (3045 grams) milk
  • 1 ½ teaspoons vanilla extract

Instructions

  1. Prepare the Dough: In a bowl, whisk together flour, powdered sugar, cinnamon, and salt. Cut in cold butter until crumbly. Mix milk, egg yolks, and vanilla; add to dry ingredients and combine gently. Refrigerate for 30 minutes.
  2. Make the Filling: Combine brown sugar, cinnamon, nutmeg, cloves, and pumpkin puree in a bowl until smooth.
  3. Assemble: Roll out chilled dough and cut into circles. Place filling on half of each circle; fold over and seal edges with a fork.
  4. Bake: Preheat oven to 375°F (190°C). Bake pasties for 25 minutes until golden brown.
