  • 2 large egg whites (room temperature)
  • 1/4 tsp cream of tartar
  • 1/2 cup white sugar
  • 1 stick unsalted butter (softened)
  • 2 cups confectioner's sugar
  • 2 tbsp milk
  • purple gel food coloring
  • black decorating frosting

Instructions

  1. Preheat your oven to 200 degrees F and line a baking sheet with parchment paper.
  2. In a large bowl, beat the egg whites on low speed, gradually adding cream of tartar.
  3. Slowly incorporate the sugar while increasing the mixer speed to high until stiff peaks form.
  4. Transfer the meringue into a piping bag fitted with Wilton tip #12 and pipe ghost shapes on the baking sheet.
  5. Bake for 2 hours; once done, turn off the oven and let them cool inside for 30 minutes.
  6. While cooling, mix softened butter, confectioner's sugar, and milk in another bowl until smooth. Add purple gel coloring and mix until incorporated.
  7. Frost each cupcake with the purple buttercream using a piping bag.
  8. After meringues have cooled completely, pipe eyes and mouths onto them using black decorating frosting.
  9. Place one meringue ghost atop each frosted cupcake.
