  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese (or a dairy-free alternative)
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Sauté the diced onion until softened (3-4 minutes). Add ground turkey, breaking it apart as it cooks until browned (5-6 minutes). Drain any excess fat if necessary.
  3. Stir in minced garlic, diced bell pepper, sweet potatoes, smoked paprika, cumin, thyme, salt, and pepper. Cook for an additional 3-5 minutes.
  4. Transfer the mixture to the prepared baking dish. Cover with foil and bake for about 25 minutes until sweet potatoes are tender.
  5. Remove foil and sprinkle cheese on top. Return to oven for another 10-15 minutes until melted and bubbly.
