  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (4 ounces) green chilies
  • 8 medium tortillas
  • 1 can (10 ounces) enchilada sauce
  • 1 ½ cups shredded cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onion until translucent, about 3-4 minutes, then add minced garlic and cook for another minute.
  2. Add ground turkey to the skillet, cooking until browned.
  3. Stir in black beans, drained tomatoes, green chilies, chili powder, cumin, smoked paprika, salt, and pepper; simmer for 5 minutes.
  4. Preheat oven to 350°F (175°C). Fill each tortilla with turkey mixture, roll tightly, and place seam-side down in a baking dish.
