  • 2 cups uncooked orzo
  • 1 lb cooked chicken, shredded (about 4 cups)
  • 2 tablespoons olive oil
  • 1 red onion, diced
  • 4 cloves garlic, minced
  • 1/2 cup sundried tomatoes, diced
  • 2 cups baby spinach, chopped
  • 1 cup crumbled feta cheese
  • 5 cups chicken broth or water
  • Juice and zest of 1 lemon

Instructions

  1. Preheat your oven to 400°F.
  2. If needed, cook chicken breasts/thighs until fully cooked (165°F) and shred.
  3. In a baking dish, combine diced onion and olive oil; roast for 5 minutes.
  4. Stir in orzo, garlic, sundried tomatoes, spinach, olives (if using), oregano, salt, additional olive oil, and mix well.
  5. Add shredded chicken, feta cheese, lemon juice/zest; stir to combine.
  6. Pour broth over mixture and stir until well incorporated.
  7. Cover with foil and bake for 15 minutes; then remove foil and bake uncovered for another 15-20 minutes until orzo is tender.
  8. Let rest for 5 minutes before serving.
