  • 1 cup Greek yogurt
  • 1 1/3 cups sugar (divided)
  • 3 eggs
  • 2 teaspoons grapefruit zest
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup vegetable oil
  • 1/3 cup fresh grapefruit juice
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, sift together flour, baking powder, and salt.
  3. In another bowl, whisk Greek yogurt, 1 cup sugar, eggs, grapefruit zest, and vanilla until smooth.
  4. Gently mix dry ingredients into wet ingredients until just combined; fold in vegetable oil.
  5. Pour batter into a greased loaf pan and bake for about 50 minutes or until a tester comes out clean.
  6. While cooling slightly, create a syrup by combining remaining grapefruit juice and sugar over low heat until dissolved. Pour over warm cake.
  7. Once cooled completely, whip together powdered sugar and grapefruit juice to glaze the top.
