  • 1/3 cup cornstarch
  • 2 cups pink grapefruit juice
  • 3/4 cup water
  • 3 large egg yolks
  • 2 tablespoons butter
  • 1/2 teaspoon lemon extract
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. Prepare the crust by rolling out the dough and placing it in a pie plate. Chill for 30 minutes, then preheat the oven to 425°F.
  2. Bake the crust lined with foil and weights for about 20-25 minutes until golden brown. Cool on a wire rack.
  3. In a saucepan, combine sugar and cornstarch. Stir in grapefruit juice and water; cook until thickened. Gradually mix in egg yolks, return to heat, and stir in butter and lemon extract before filling the crust.
  4. Beat egg whites with cream of tartar until soft peaks form; gradually add sugar until stiff peaks form. Spread over filling, sealing edges.
  5. Bake at 350°F for about 12-15 minutes until meringue is golden brown.
