  • 2 (15-ounce) cans chickpeas
  • 1 medium head of cauliflower
  • 3 large carrots
  • 4 tablespoons extra-virgin olive oil
  • 1 small yellow onion
  • 1 tablespoon grated fresh ginger
  • 4 garlic cloves
  • 3 tablespoons yellow curry powder
  • 1 teaspoon ground turmeric
  • 4 cups vegetable or chicken stock
  • 1 (13.5-ounce) can full-fat coconut milk

Instructions

  1. Preheat your oven to 425°F.
  2. Pat chickpeas dry and combine them with cauliflower florets and carrot rounds on a baking sheet. Mix olive oil with curry powder, turmeric, sea salt, and optional cayenne; drizzle over vegetables and toss.
  3. Roast the mixture for about 20 minutes until tender.
  4. In a large stockpot, heat olive oil and sauté chopped onion until softened (about 4 minutes). Add ginger and garlic; cook until fragrant (1 minute).
  5. Stir in remaining spices, then add vegetable stock and coconut milk; heat through.
  6. Blend half of the roasted veggies and chickpeas for a creamy texture. Fold in remaining ingredients.
  7. Serve hot, garnished with fresh cilantro.
