  • 1 lb sirloin steak or steak tips
  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp Dijon mustard (optional)
  • 1 tsp paprika
  • 1 package (20 oz) cheese tortellini
  • ½ cup shredded mozzarella, for topping
  • 2 tbsp chopped parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Season the steak with salt and pepper. In a skillet over medium-high heat, sear the steak in olive oil for about 2–3 minutes per side until browned.
  2. In the same skillet, melt butter and sauté minced garlic until fragrant. Stir in flour to create a roux, then gradually whisk in milk and beef broth until smooth. Mix in cheddar cheese until melted.
  3. Cook tortellini according to package directions but slightly undercook them. Drain and toss with olive oil.
  4. In a greased baking dish, combine cooked tortellini, seared steak, and cheese sauce until well mixed. Top with shredded mozzarella.
  5. Bake uncovered for 20–25 minutes until golden brown and bubbly.
