Garlic Butter Sweet Potato Stacks are a visually stunning and flavorful side dish that will impress your guests at any gathering.   • 1.2 kg Sweet Potatoes
  • 6 tbsp Unsalted Butter, melted
  • 3 large Garlic cloves, finely grated
  • 1 tbsp Fresh Rosemary, finely diced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 45g Parmesan cheese

Instructions

  1. Preheat your oven to 180C/350F.
  2. Peel the sweet potatoes and slice them into uniform rounds about 3mm thick.
  3. In a mixing bowl, combine melted butter, garlic, rosemary, salt, and pepper. Toss in sweet potato slices until well coated.
  4. Layer the potato slices in a muffin tray, stacking them high and brushing with remaining butter.
  5. Cover with foil and bake for 35 minutes. Remove foil, increase heat to 200C/400F, and bake for an additional 15 minutes until tender and slightly charred.
  6. Serve warm by scooping out each stack and drizzling with remaining butter.
