  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved

Instructions

  1. Prepare the tartlet shells by pressing Pâte Sucrée dough into tartlet pans.
  2. Freeze the shells for 15–30 minutes to maintain shape while baking.
  3. Preheat oven to 375°F, prick the shells, line with parchment and pie weights, then bake until golden brown.
  4. Create strawberry jam by simmering chopped strawberries and sugar until thickened; let cool.
  5. For the pastry cream, heat condensed milk, whole milk, and heavy cream; temper egg yolks mixed with cornstarch before combining; cook until thickened and chill.
  6. Assemble by spreading strawberry jam in each shell, piping pastry cream on top, and garnishing with halved strawberries.
