  • 1/2 Baguette
  • 1 tbsp Olive Oil
  • 5 Onions (thinly sliced)
  • 300 g Cavatappi Macaroni
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Parmesan Cheese (grated)
  • 1 tbsp Flour + 3 tbsp water (for béchamel)
  • Fresh Parsley (chopped)

Instructions

  1. Thinly slice the onions.
  2. In a skillet, heat olive oil and sauté onions for 30–40 minutes until caramelized.
  3. Prepare the béchamel sauce by whisking flour into melted butter, then adding heavy cream gradually until smooth.
  4. Mix in two-thirds of the caramelized onions with salt, pepper, parsley, and Parmesan cheese.
  5. Cook cavatappi macaroni until just under al dente; drain.
  6. Combine pasta with the béchamel sauce until well-coated.
  7. Transfer to a baking dish, top with remaining onions and breadcrumbs from baguette.
  8. Bake uncovered at 350°F (175°C) for 10–15 minutes until golden brown.
