  • 1 pound beef short ribs
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 bay leaf
  • Salt and pepper to taste
  • 4 slices French bread
  • 1 cup shredded Swiss or Gruyère cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Season beef short ribs with salt and pepper; sear until browned on all sides (about 4–5 minutes per side). Remove from pot.
  2. Add sliced onions to the pot; cook slowly until caramelized (15–20 minutes), stirring occasionally.
  3. Stir in minced garlic; cook for an additional minute before returning the short ribs to the pot along with beef broth, balsamic vinegar, thyme, bay leaf, and more seasoning if needed. Bring to a boil, then reduce heat.
  4. Cover and simmer for 1.5 to 2 hours until the beef is tender.
  5. Meanwhile, preheat the oven broiler and lightly toast French bread slices.
  6. Once beef is tender, shred it from the bones and return meat to the pot.
  7. Ladle soup into oven-safe bowls; top with toasted bread slices and shredded cheese. Broil for 2–3 minutes until cheese is melted.
