  • 1 tbsp olive oil
  • 2 lbs chicken thighs and legs
  • Salt
  • 4 shallots (diced) or one medium onion
  • 1 rib celery (diced)
  • 45 sprigs thyme
  • 2 cloves garlic (minced)
  • 2 tbsp apple juice
  • 2 tbsp flour
  • 85 ml chicken stock
  • 2 apples (peeled, cored, cut into wedges)
  • 125 ml coconut cream (or heavy cream)

Instructions

  1. Preheat your oven to 180C/350F. Pat dry the chicken and season with salt.
  2. Heat olive oil in a large casserole dish over medium-high heat. Brown the chicken on all sides and set aside.
  3. In the same pan, sauté diced shallots and celery until softened. Add minced garlic and cook briefly.
  4. Pour in apple juice, scraping up brown bits from the pan, then let it reduce before adding flour to form a paste.
  5. Gradually whisk in chicken stock until smooth. Return chicken to the casserole along with thyme.
  6. Cover and bake for 30 minutes; remove lid and bake for another 30 minutes.
  7. Meanwhile, sauté apple wedges until golden. Stir coconut cream into the casserole after baking, followed by the apples, and cook uncovered for an additional 20 minutes.
