  • 8 ounces dry protein pasta
  • 2 5-ounce cans albacore tuna in water
  • 1 15.5-ounce can of white kidney beans, drained
  • 4 large hard-boiled eggs
  • 2 scallions, thinly sliced
  • 1 cup frozen peas
  • 1 cup whole milk cottage cheese
  • 1/2 cup mayonnaise
  • 24 tbsp apple cider vinegar
  • 2 tsp Dijon mustard
  • 1 tsp dried dill
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  1. Cook the pasta according to package instructions until al dente; drain and rinse under cold water.
  2. While pasta cooks, prepare hard-boiled eggs and chop scallions; rinse peas if frozen.
  3. In a large bowl, combine cooked pasta with tuna, beans, eggs, scallions, and peas.
  4. In another bowl, whisk together cottage cheese, mayo, vinegar, mustard, and spices until smooth.
  5. Pour dressing over pasta mixture; gently fold until well-coated. Cover and chill for at least 15 minutes before serving.
