  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • Fresh cilantro for garnish
  • Juice of 1 lime

Instructions

  1. Combine all ingredients except lime juice and cilantro in a slow cooker: chicken breasts, chicken broth, coconut milk, red curry paste, diced onion, minced garlic, and sliced red bell pepper.
  2. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  3. Remove the chicken and shred it using two forks; return the shredded chicken to the pot.
  4. Stir in fresh lime juice before serving and garnish with cilantro.
