  • 1 red bell pepper, chopped

  • 3 tsp taco seasoning
  • 1 tsp dried oregano
  • 2 cloves garlic, minced
  • ½ tsp salt (omit if using salted taco seasoning)
  • 2 cups jarred tomato salsa
  • 1 can black beans (19 oz), rinsed and drained
  • 6 large tortillas
  • 3 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium-high heat, cook ground beef with red bell pepper and onion until browned.
  3. Add taco seasoning, garlic, and salt; cook for another minute.
  4. Stir in salsa and black beans; mix well.
  5. Layer two tortillas in a baking dish; add one-third of the beef mixture followed by one-third of the cheese. Repeat layers twice.
  6. Bake for 15-20 minutes until heated through and cheese is bubbly.
  7. Let cool slightly before serving.
