  • 450 g boneless skinless chicken breasts
  • 190 g long-grain brown rice or risotto rice
  • 480 ml chicken broth
  • 450 g broccoli florets
  • 120 ml sour cream or Greek yogurt
  • 200 g sharp cheddar cheese, grated

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. In the crockpot, mix chicken broth, sour cream or yogurt, dried thyme, garlic powder, onion powder, salt, and pepper.
  3. Add rinsed rice and chicken; stir well and then top with broccoli florets.
  4. Cover and cook on low for 3 to 4 hours or high for 2 to 3 hours until chicken is cooked through and rice is tender.
  5. Stir in half of the cheese; sprinkle the remaining cheese on top and let it melt before serving.
