Ingredients

  • Unsalted butter or olive oil
  • Chopped yellow onion
  • Poblano pepper
  • Shredded chicken
  • Black beans (canned)
  • Frozen corn
  • Chicken broth
  • Heavy cream
  • Shredded cheese (your choice)
  • Fresh lime juice
  • Garlic powder
  • Onion powder
  • Chili powder
  • Dried oregano
  • Cumin

Instructions

  1. In a large saucepan, melt the butter over medium heat. Add chopped onions and poblano pepper along with half of the seasoning blend. Cook for 5–6 minutes until tender.
  2. Stir in shredded chicken, black beans, frozen corn, chicken broth, and the remaining seasoning. Bring to a gentle simmer and cook uncovered for 15 minutes.
  3. Add heavy cream and shredded cheese; stir until melted and creamy. Simmer for another 15 minutes.
  4. Just before serving, stir in fresh lime juice and adjust seasoning with salt and pepper.
