  • 6 medium potatoes
  • 1 cup full-fat milk
  • 1 cup double cream
  • 1 tbsp plain flour
  • 30 g butter
  • 1 cup Cheddar cheese
  • 2 tbsp grated parmesan
  • 1 tbsp dijon mustard
  • 2 cloves garlic
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 200°C (390°F).
  2. Peel and wash the potatoes; slice them thinly to ensure even cooking.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and gradually whisk in the milk until smooth.
  4. Add both cheeses to the sauce, stirring until melted and creamy.
  5. Incorporate minced garlic, dijon mustard, nutmeg, salt, and pepper into the sauce.
  6. In a greased baking dish, layer the sliced potatoes, pouring a quarter of the sauce over each layer until all ingredients are used.
  7. Cover with foil and bake for one hour; remove foil for an additional 15 minutes at 220°C (410°F) to achieve a golden crust.
  8. Let sit for 10 minutes before serving.
