  • 67 medium Yukon gold potatoes
  • ½ white or yellow onion
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • Freshly ground black pepper
  • ½ cup Gruyere cheese (optional)
  • ¼ cup grated parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a baking dish and layer sliced potatoes and onions.
  3. In a saucepan, melt butter over medium heat. Whisk in flour gradually while adding almond milk until smooth. Bring to a simmer.
  4. Stir in cheddar cheese, garlic powder, salt, and pepper until melted.
  5. Pour the sauce over the layered potatoes and onions.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil, sprinkle Gruyere and parmesan on top, then bake uncovered for an additional 30-45 minutes until golden brown.
