  • 1 large yellow onion (diced)
  • 1 cup carrots (thinly sliced)
  • ¾ cup celery (diced)
  • 4 cups low sodium chicken broth
  • 2 (15 oz) cans crushed tomatoes
  • 2 (15 oz) cans cannellini beans (drained and rinsed)
  • 6 cups water
  • 1 (16 oz) box of ditalini pasta (uncooked)
  • 1 tsp salt
  • 1½ tsp black pepper
  • 4 tsp garlic (minced)
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • ½ tsp dried parsley
  • 1 tbsp tomato paste
  • 1 cup Parmesan Reggiano (for topping)

Instructions

  1. Start by adding diced onion, sliced carrots, and diced celery to the slow cooker.
  2. Sprinkle in salt, pepper, minced garlic, thyme, basil, parsley, and tomato paste; stir to combine.
  3. Add crushed tomatoes and rinsed beans followed by chicken broth and water; mix well.
  4. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  5. About 30 minutes before serving, stir in uncooked ditalini pasta.
  6. Ladle into bowls and top with grated Parmesan cheese before serving.
