  • 2 chicken breasts (6 oz each), cut into cutlets
  • 2 cups seasoned panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon granulated garlic
  • 1 teaspoon chili powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 23 large eggs
  • Olive oil cooking spray
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat air fryer to 390°F.
  2. Prepare a breading station: mix breadcrumbs, parmesan, Italian seasoning, garlic, salt, and pepper in one bowl; whisk eggs in another.
  3. Dry chicken cutlets with paper towels. Dip in egg wash and coat with breadcrumb mixture.
  4. Lightly spray air fryer basket with olive oil. Place coated chicken inside without overcrowding and spray lightly with oil. Cook for 5 minutes, flip, and cook another 5 minutes.
  5. Top chicken with tomato sauce and mozzarella cheese; cook for an additional 2 minutes until cheese is melted.
