  • 4 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 4 ciabatta rolls
  • 1 cup Caesar dressing
  • 1 cup chopped romaine lettuce
  • 1 tbsp olive oil
  • Oil for frying

Instructions

  1. Marinate chicken breasts in buttermilk for at least one hour in the refrigerator.
  2. Mix flour, panko breadcrumbs, Parmesan, garlic powder, onion powder, paprika, salt, and pepper in a shallow dish.
  3. Beat eggs in another bowl.
  4. Remove chicken from buttermilk; dip into beaten eggs and then coat with breadcrumb mixture.
  5. In a frying pan, heat oil over medium heat and fry chicken for about 5-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).
  6. Drain excess oil on paper towels; toast ciabatta rolls lightly with olive oil.
  7. Assemble sandwiches by spreading Caesar dressing on rolls and layering with romaine lettuce and crispy chicken pieces.
