- 12 oz turkey sausage (crumbled)
- 1 tablespoon olive oil
- 1 large sweet potato (peeled and cubed)
- 5 cloves garlic (minced)
- 6 cups water
- 8 oz cheese tortellini (refrigerated)
- 4 oz fresh spinach
- 1/2 cup heavy cream
- Fresh thyme for garnish
- Heat olive oil in a large pot over medium heat and brown crumbled turkey sausage.
- Once cooked, drain excess grease and add Italian seasoning and paprika.
- Stir in cubed sweet potatoes, minced garlic, red pepper flakes, and tomato paste.
- Pour in water; bring to a boil and then reduce heat to simmer for 15 minutes until sweet potatoes are tender.
- Add tortellini; cook according to package instructions (about 10 minutes).
- Stir in fresh spinach until wilted.
- Remove from heat and mix in heavy cream until well combined.
- Season with salt if needed; serve topped with fresh thyme.
