  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • Sliced green onions (for garnish)
  • Extra shredded cheese (for garnish)
  • Crushed tortilla chips (for serving)

Instructions

  1. In a large pot over medium heat, sauté the ground beef and diced onion until the meat is browned and onions are soft.
  2. Add minced garlic and spices; cook for an additional minute until fragrant.
  3. Stir in beef broth and both cans of diced tomatoes; mix well.
  4. Incorporate drained corn, black beans, and diced potatoes. Season with salt and pepper. Bring to a boil, then simmer for about 20 minutes.
  5. Stir in heavy cream (or half-and-half) and shredded cheddar cheese until melted.
  6. Serve hot with sliced green onions, extra cheese, and crushed tortilla chips on top.
