Ingredients

Scale
  • 3 lb boneless chuck roast
  • 3 lbs yellow onions
  • 2 cloves garlic
  • 1 cup red wine or extra beef stock
  • 2 ½ cups beef stock
  • Fresh herbs (rosemary and bay leaf)
  • Olive oil, salt, and pepper

Instructions

  1. Season the chuck roast with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat and sear the meat until browned on all sides. Remove and set aside.
  2. In the same pot, add more olive oil and cook sliced onions until soft and golden brown. Stir in minced garlic, maple syrup (or brown sugar), and flour; cook for an additional minute.
  3. Deglaze with red wine (or beef stock), scraping up browned bits. Return the roast to the pot, add beef stock, rosemary, and bay leaf.
  4. Cover and reduce heat to low; simmer for about three hours until meat is fork-tender.
