  • 13.5-ounce can full-fat coconut milk
  • 1 ½ cups water (or coconut water)
  • ½ teaspoon salt

Instructions

  1. Rinse jasmine rice in a fine mesh strainer until the water runs clear.
  2. In a medium saucepan over high heat, combine coconut milk, water, and salt. Bring to a boil.
  3. Add rinsed rice, stir gently, and return to a simmer.
  4. Reduce heat to low, cover pot, and let simmer for 15-20 minutes until liquid is absorbed.
  5. Remove from heat and let sit covered for an additional 15 minutes.
  6. Fluff with a fork before serving.
