  • 2 lbs chicken thighs and legs (bone-in and skin-on)
  • 1/2 cup all-purpose flour
  • 3 tbsp paprika (or Hungarian paprika)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 cup sweet onion (chopped)
  • 1/8 tsp cayenne pepper
  • 2 cups low sodium chicken stock
  • 1 cup sour cream

Instructions

  1. Combine flour, paprika, sea salt, and black pepper in a bowl. Dredge each piece of chicken in the mixture.
  2. In a large pot over medium-high heat, add vegetable oil. Brown the chicken for about three minutes on each side until golden brown. Remove and set aside.
  3. In the same pot, sauté onions with cayenne pepper and remaining paprika until tender.
  4. Return chicken to the pot and pour in chicken stock. Bring to a boil, then reduce heat, cover, and simmer for about 45 minutes.
  5. Mix sour cream with leftover flour mixture and combine with skillet liquid until smooth. Stir back into the pot and simmer for an additional five minutes.
