  • 4 Tbsp unsalted butter
  • 1 medium onion (finely chopped)
  • 3 garlic cloves (minced)
  • 2 ½ cups chicken broth
  • 1 ½ cups half-and-half
  • 5 oz fresh spinach (coarsely chopped)
  • 15 oz ricotta cheese
  • 3 cups mozzarella cheese (divided)

Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté the onion until translucent, then add minced garlic.
  2. Stir in flour to create a roux. Gradually whisk in chicken broth and half-and-half, stirring until thickened.
  3. Incorporate spinach until wilted, then fold in shredded chicken. Season with salt and pepper.
  4. In another bowl, mix ricotta cheese with egg and parsley.
  5. Layer the baking dish starting with sauce, noodles, ricotta mixture, and mozzarella cheese; repeat layers.
