  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry, uncooked)
  • 2 cups shredded cheese (any variety)

Instructions

  1. In a large skillet over medium-high heat, heat olive oil and add ground beef and diced onion. Cook until the beef is browned and onions are translucent (about 8-10 minutes). Drain excess grease.
  2. Stir in minced garlic and taco seasoning; cook for about 30 seconds.
  3. Add beef broth, Rotel, and tomato paste. Bring to a boil before stirring in dry rice.
  4. Cover and reduce heat to medium-low; simmer for about 15 minutes until the rice absorbs the liquid.
  5. Sprinkle shredded cheese over the top; cover again for about 5 minutes until melted.
