  • 1 cup yellow onion, finely chopped
  • 1 medium garlic clove, minced
  • 4 cups corn kernels (fresh or thawed)
  • 1 cup shredded cheddar cheese
  • 3 large eggs
  • 1 cup milk
  • Salt and pepper to taste
  • Optional: 1 pie crust

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a pie dish with butter.
  2. In a large skillet over medium heat, melt the butter and sauté the onion until softened (about 5 minutes). Add garlic and cook for another minute.
  3. Stir in the corn kernels and sauté for an additional 2-3 minutes until warmed through. Remove from heat.
  4. In a large bowl, whisk together eggs, milk, salt, and pepper until smooth.
  5. Gently mix in the sautéed corn mixture and shredded cheddar cheese.
  6. Pour the filling into the prepared pie dish (add crust if using) and bake for 35-40 minutes until golden on top.
  7. Allow to cool for at least 10 minutes before slicing.
