  • 1 pound large shrimp (peeled and deveined)
  • 1 â…“ cups uncooked long grain white rice
  • 2 â…” cups chicken broth
  • 4 tablespoons butter (divided)
  • 1 teaspoon minced garlic
  • 1 ½ teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon cracked black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon crushed red pepper flakes

Instructions

  1. In a small bowl, whisk together the Cajun seasoning ingredients.
  2. Melt 2 tablespoons of butter in a large skillet over medium heat. Add garlic and half of the Cajun seasoning; stir in the rice.
  3. Pour in chicken broth, bring to a boil, then reduce heat and simmer covered for about 15 minutes.
  4. While the rice cooks, mix remaining melted butter with shrimp and the rest of the Cajun seasoning in another bowl.
  5. Once rice is cooked, add seasoned shrimp to the skillet and cover. Cook for an additional 3-5 minutes until shrimp are pink and opaque.
