  • 1 head of garlic
  • 3 tbsp olive oil
  • 50 grams butter
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 200 grams all-purpose flour
  • 200 grams mozzarella cheese
  • 2 egg yolks
  • 1 tablespoon honey
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon fresh parsley (for garlic butter)
  • Sprinkle of salt (for garlic butter)
  • 25 grams (2 tbsp) butter (for dough)
  • 1 egg (for egg wash)

Instructions

  1. Roast the garlic until soft and sweet.
  2. Mix roasted garlic with softened butter, parsley, and garlic oil to create garlic butter.
  3. Combine warm milk, yeast, and honey; let it proof.
  4. Mix flours, sugar, and salt; add the yeast mixture and knead until smooth.
  5. Allow dough to rise until doubled in size.
  6. Roll out dough, spread garlic butter, sprinkle mozzarella, cut into portions, and let rise again.
  7. Bake until golden brown and brush with remaining garlic butter before serving.
