  • 2 gala apples (peeled, cored, and diced)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoons butter (or coconut oil for vegan option)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans (or walnuts)
  • 1/4 cup dried cranberries

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix butternut squash, apples, cinnamon, vanilla extract, and brown sugar until well combined.
  3. Season mixture with salt and black pepper.
  4. Transfer to a baking dish covered with a lid.
  5. Dot the top with butter or coconut oil and bake for 15 minutes.
  6. Add raisins, cranberries, and nuts; gently toss to combine.
  7. Cover again and bake for an additional 15 minutes until tender.
  8. Serve warm after giving it a good stir.
