  • 1 medium head of cauliflower (cut into florets)
  • 2 Tbsp. fresh lemon juice
  • 3 Tbsp. unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 2 cups vegetable broth
  • 1/2 cup full-fat canned coconut milk
  • 1 tsp. ground cumin
  • 1 tsp. ground turmeric (divided)
  • 3 tsp. garam masala (divided)
  • 2 Tbsp. tomato paste
  • 1 tsp. paprika
  • 1/4 tsp. ground cinnamon
  • Pinch of cayenne pepper (optional)
  • 2 tsp. corn starch
  • 2 Tbsp. olive oil (divided)
  • 1 8-oz. can tomato sauce

Instructions

  1. In a large bowl, combine lemon juice, corn starch, cumin, half of the turmeric and garam masala.
  2. Heat olive oil in a skillet over medium-high heat and sauté the seasoned cauliflower until browned and tender.
  3. In the same skillet, add butter and onions; sauté until translucent.
  4. Stir in garlic and ginger followed by tomato paste; cook until fragrant.
  5. Add remaining spices and tomato sauce with vegetable broth; bring to a boil then simmer.
  6. Stir in coconut milk and return sautéed cauliflower; simmer until thickened.
  7. Serve hot over basmati rice garnished with cilantro and yogurt.
