  • 3 garlic cloves
  • 2 Tbsp. tomato paste
  • 2 cups vegetable broth
  • 1/2 cup full-fat canned coconut milk
  • 2 Tbsp. fresh lemon juice
  • 2 tsp. corn starch
  • 1/2 tsp. ground cumin
  • 1 tsp. ground turmeric (divided)
  • 3 tsp. garam masala (divided)
  • 1 1/2 tsp. salt (divided)
  • 2 Tbsp. olive oil (divided)
  • 3 Tbsp. unsalted butter
  • 1 tsp. paprika
  • 1/4 tsp. ground cinnamon
  • Pinch of cayenne pepper (optional)
  • Basmati rice for serving
  • Fresh cilantro and whole-milk Greek yogurt for garnish

Instructions

  1. In a large bowl, combine lemon juice, corn starch, cumin, half of the turmeric, garam masala, and salt.
  2. Heat olive oil in a skillet over medium-high heat; sauté cauliflower florets until golden brown (7-8 minutes).
  3. Mix cauliflower with the seasoning mixture; return to skillet and cook until tender (another 7-8 minutes).
  4. In the same skillet, add remaining olive oil and butter; sauté onions until translucent (8 minutes), then add garlic, ginger, and tomato paste.
  5. Stir in spices and cook for one minute; then add tomato sauce and vegetable broth.
  6. Simmer gently before incorporating coconut milk and cauliflower; cook until sauce thickens (15 minutes).
  7. Serve over basmati rice with optional garnishes like cilantro or Greek yogurt.
