  • 2 tablespoons honey
  • 100 grams blue cheese, crumbled
  • 100 grams grated Parmesan cheese
  • 50 grams walnuts, chopped
  • 68 sprigs fresh thyme leaves
  • 1 tablespoon milk
  • Sea salt and cracked pepper

Instructions

  1. Preheat your oven to 180C (350F) or 200C (390F) for electric non-fan ovens.
  2. Drizzle honey over each sheet of puff pastry.
  3. Evenly divide the blue cheese, Parmesan, walnuts, and thyme on each sheet. Season with salt and pepper.
  4. Roll each sheet tightly into a log and cut in half lengthwise.
  5. Twist each length into a coil shape on baking paper.
  6. Brush with milk and bake for 25-30 minutes until golden brown.
