  • 2 shallots (chopped)
  • 1⅓ cups apple vinegar
  • 2½ cups beef broth (divided)
  • 3 sprigs fresh thyme
  • 4 cloves garlic (minced)
  • Fresh rosemary (for seasoning)

Instructions

  1. Prepare the sauce: Melt 2 tablespoons of butter in a saucepan over medium heat. Add chopped shallots and sauté until translucent. Stir in apple vinegar, 1 cup of beef broth, and thyme; simmer for about 15 minutes.
  2. Preheat your oven to 400°F (200°C). In a large skillet, heat remaining olive oil over medium-high heat. Season the tenderloin with salt and pepper, then sear on all sides for about 2-3 minutes each.
  3. Transfer the seared tenderloin to the oven and roast for 20-25 minutes or until it reaches your desired doneness (135°F for medium-rare). Allow resting for at least 10 minutes before slicing.
  4. Complete the sauce by removing thyme sprigs and adding remaining beef broth, garlic, and rosemary; simmer for a few more minutes before serving.
