  • 1 pound ground sirloin or lean ground beef
  • 1 tablespoon Dijon mustard
  • 2/3 cup barbecue sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon tamari
  • 4 medium sweet potatoes, peeled and diced into 1-inch cubes
  • 1 bunch broccoli, cut into medium florets
  • 4 tablespoons extra-virgin olive oil, divided
  • 1 ripe avocado
  • 1/2 cup Greek yogurt
  • Juice of 1 lime
  • 1 large garlic clove, minced
  • 1/2 teaspoon sea salt
  • Big handful of fresh herbs (basil and dill)
  • 4 cups cooked quinoa or brown rice

Instructions

  1. Preheat oven to 425°F.
  2. In a bowl, mix ground beef with Dijon mustard, salt, pepper, egg, Panko breadcrumbs, smoked paprika, oregano, basil, and garlic. Form into approximately 16 meatballs.
  3. Brown meatballs in an oven-safe skillet over medium heat for about 2 minutes on each side.
  4. Transfer skillet to the oven and bake for 15 minutes.
  5. Roast diced sweet potatoes and broccoli drizzled with olive oil on separate baking sheets until tender (sweet potatoes: 25-30 mins; broccoli: 20 mins).
  6. Whisk together barbecue sauce ingredients and pour over baked meatballs; heat until warmed through.
  7. Blend avocado goddess sauce ingredients until smooth.
  8. Serve meatballs over quinoa with roasted vegetables and a generous dollop of avocado goddess sauce.
