  • 2 1/4 tsp active dry yeast
  • 1 large egg
  • 2/3 cup mashed bananas
  • 5 1/4 cups all-purpose flour
  • 10 tbsp unsalted butter
  • 3/4 cup brown sugar
  • 1 tbsp ground cinnamon
  • 4 oz cream cheese (room temperature)
  • 4 tbsp unsalted butter (room temperature)
  • 1 cup powdered sugar (sifted)
  • 1 tsp vanilla extract

Instructions

  1. Warm milk to about 110°F and stir in yeast; let sit until frothy (about 5 minutes).
  2. In a large bowl, mix mashed bananas, beaten egg, sugar, salt, and softened butter. Add yeast mixture.
  3. Gradually add flour while mixing until a soft dough forms; knead until smooth.
  4. Let dough rise in a greased bowl covered with a towel until doubled in size (about 1 hour).
  5. Roll out the dough into a rectangle; spread butter and sprinkle with brown sugar mixed with cinnamon and banana slices.
  6. Roll tightly into a log and slice into equal pieces; place cut-side up in a greased baking dish.
  7. Let rolled dough rise again for about 30 minutes.
  8. Preheat oven to 350°F and bake for about 25-30 minutes until golden brown.
  9. While baking, make icing by mixing cream cheese, butter, powdered sugar, and vanilla until smooth.
  10. Cool slightly before drizzling icing on warm rolls.
